Preparation
  1. Gather all the ingredients and equipment.
  2. Scale ingredients.
  3. Heat a suzette pan, add the sugar and butter; caramelize.
  4. Add the bananas and coat them with caramel.
  5. Remove the pan from the heat and add the dark rum and banana liqueur.
  6. Return to the heat and ignite.
  7. Sprinkle the cinnamon-sugar mixture over the bananas while the flames are visible.
  8. When the flames subside, spoon the sliced bananas and sauce over a 4-oz. (113 g) scoop of ice cream, and serve immediately.
