US standard
Beef short ribs, cut into 3” lengths
10, 10-ounce portions
Scallions, including greens, minced
5 stalks
Garlic, peeled and minced
3 cloves
Soy sauce
10 ounces
Sesame seed oil
6 ounces
Sesame seeds, toasted
3 teaspoons
White vinegar
3 teaspoons
Sugar
5 tablespoons
Mustard, hot, dry
3 teaspoons
Black pepper
3 teaspoons
Scallions, fans for garnish
As needed
Preparation
  1. Gather all ingredients and equipment.
  2. Trim excess fat from short ribs. Score meat every 1/2 inch, almost to the bone.
  3. Combine all other ingredients, and pour over short ribs. Marinate overnight in the refrigerator.
  4. Broil over charcoal or under broiler. Start with the meat toward the heat; finish with bones toward the heat. Broiling time is approximately 15 minutes. Finish in a 375°F oven for 30 minutes, or until done.
