Celeriac

Crème fraîche
2 ounces
Dijon mustard
2 teaspoons
Sugar

Apple, red delicious

Lemon Juice

Chives, fresh, chopped
1 tablespoon
Tabasco sauce
To taste
Kosher salt
To taste
Black pepper
To taste
Preparation
  1. Gather all the ingredients and equipment.
  2. Cut the celery root in fine julienne with a mandolin.
  3. Combine the mayonnaise, crème fraîche, mustard, and sugar in a bowl.
  4. Julienne a red delicious apple (leaving the skin on) and mix with dressing. Gently stir in the celery root julienne.
  5. Add fresh chives, lemon juice, and 6 drops of Tabasco sauce, stir.
  6. Adjust taste with salt and pepper.
  7. Serve with a selection of French cheeses and long flat croutons.
