  1. Gather all the ingredients and equipment.
  2. Scale ingredients.
  3. Combine cream cheese, zest and sugar in small mixing bowl. Paddle until smooth.
  4. Scrape the bowl. There should be no lumps.
  5. Slowly add the egg, then the cream, scraping several times.
  6. Add the vanilla.
  7. Pour into graham cracker crust.
  8. Bake in a water bath at 325°F until done.
