Preparation
  1. Gather all the ingredients and equipment.
  2. Pre-heat oven to a temperature of 375°F.
  3. Scale ingredients.
  4. Cream sugar and eggs.
  5. Add the vanilla and almond extract.
  6. Add oil slowly.
  7. Sift the bread flour, pastry flour, baking powder and salt.
  8. Add the dry ingredients to the creamed mixture and mix just to smooth. Scrape the bowl down thoroughly and mix to smooth.
  9. Portion cookies, using a number 24 ice cream scoop, onto a bed of sliced almonds. Roll cookies lightly in the almonds, then place the cookies onto parchment-lined sheet pans 4 x 6.
  10. Bake cookies for 12 to 15 minutes.
