  3. Simmer slowly until milk solids begin falling to the bottom. Stir occasionally to prevent them from burning.
  4. Cook until the butter turns golden yellow and perfectly clear.
  5. Strain through a chinois lined with several layers of dry cheesecloth to collect impurities.
