Preparation
  1. Gather all the ingredients and equipment.
  2. Prepare the consommé using standard recipe.
  3. Temper hot milk into eggs and salt.
  4. Pour about ¼ inch (0.63 centimeter) deep into a buttered mold.
  5. Place mold in sheet pan with boiling water in it.
  6. Bake at 250°F (121°C) until firm to prevent formation of air holes.
  7. Remove from oven when done, and place in sheet pan filled with ice water to stop cooking action. Cut in desired shape for garnish.
  8. Heat consommé to a boil. Serve in soup cups with royal custard garnish.
