Preparation
  1. Gather all the ingredients and equipment.
  2. Prepare consommé using the standard recipe.
  3. Preheat the oven to 350°F (177°C) or the broiler on low.
  4. Brush croutons with butter.
  5. Spread Dijon mustard and grated parmesan cheese on French bread croutons, toast in the broiler or bake in the oven until lightly browned and cheese is melted.
  6. To serve, ladle the consommé into a preheated bouillon cup, and serve 2 croutons on the side.
