Preparation
  1. Gather all the ingredients and equipment.
  2. Preheat oil in deep fat fryer to 350°F (177°C).
  3. Pass the fish fillets through the “standard breading procedure” of flour, egg-wash and breading to apply the coating (as demonstrated).
  4. Start with the baskets down in the deep fat. Slowly drop the breaded fillets into the hot fat a few at a time.
  5. Deep fry to a golden brown and check internal temperature of 145°F (63°C).
  6. Drain well and hold for service at a minimum of 135°F (57°C) or better yet, serve immediately.
