Haricots verts, stem ends trimmed, blanched and shocked (see chef's notes)
3 pounds
Clarified butter
As needed
Almonds, sliced, toasted
8 ounces
Salt
To taste
White pepper, ground
To taste
Preparation
  1. Gather all the ingredients and equipment.
  2. In a saucepan over medium heat, heat 1 tablespoon of butter per batch, and sauté beans "à la minute" (see chef's notes). Add the almonds, and season to taste.
  3. Serve immediately or hold in hotel pan until service.
