Preparation
  1. Gather all the ingredients and equipment.
  2. Preheat the grill.
  3. Season the steaks and coat lightly with salad oil.
  4. For à la minute preparation, scrape down the grill with a wire brush and coat the cooking surface lightly with oil to help prevent sticking.
  5. Place steaks on the hot grill, mark the “service side,” turning once to complete the cooking process.
  6. Cook to the desired degree of doneness and test for firmness to the touch and/or internal temperature.
  7. Remove and serve immediately or hold at a minimum of 135°F (57°C).
