Preparation
  1. Gather all the ingredients and equipment.
  2. Preheat the grill.
  3. Place ground beef in a stainless steel bowl, season lightly with salt and pepper.
  4. Divide the beef into 4-ounce (115-gram) portions and form into “burgers” about ½ inch (1.3 centimeters) thick.
  5. Place on a parchment-lined pan, cover and refrigerate until needed.
  6. For à la minute preparation, first scrape down the grill with a wire brush and coat the cooking surface lightly with oil.
  7. Place burgers on grill; mark the “service side” then turn and finish.
  8. Cook to an internal temperature of 155°F (68°C), remove and hold for service at a minimum of 135°F (57°C).
