Broiling

Broiling uses radiant heat from above to cook food on an open grid. Full heat is customary for broiling, infrared broilers can reach temperatures that exceed 1,500⁰F (816⁰C). Place the food on a preheated metal rack under the heat source. The hot rack will create grill marks on the food. To avoid grill marks, you may broil the food on a heat-proof platter.
